Gluten Free Zucchini Bread
/Ingredients:
1 cup buckwheat flour
1 cup teff flour
1 tbsp cinnamon
2 tsp salt
1/3 tsp baking powder
3 eggs
1 cup applesauce
1/2 cup maple syrup
1 tbsp oil
2 tsp vanilla
2 cups shredded zucchini
1 cup raisins (optional)
1 cup chopped walnuts (optional)
Directions:
1. Preheat oven to 350 F
2. Mix wet ingredients and then add dry ingredients
3. Bake in oiled loaf pan for about 1 hour
4. Makes 1 loaf
