Sweet Potato Corn Bread Muffins
/Ingredients:
2 T oil
1/2 c sweet potato
2 eggs
1 1/4 c milk
3/4 c flour
1 1/4 c cornmeal
1 T baking powder
1 t salt
1/2 t cinnamon
1/2 t nutmeg
Directions:
1. Preheat oven to 350 F
2. Combine all wet ingredients and then add dry ingredients
3. Bake in oiled or lined muffin tins for about 20 minutes
Makes about 20 muffins
